| Half-day cookery class, learning how to shop for and prepare some of Vietnam's well-known dishes, then sitting down to eat what you have made! |

| You will be met at your hotel in Hoi An at 7.45am and taken to the Red Bridge Restaurant to meet your classmates and chef. All head for the central market from here, and your chef will show you which ingredients he has chosen for the lesson. then board the Red Bridge boat for a leisurely cruise of around 25 minutes along the Hoi An River to the Cooking School and, on arrival, explore the herb garden. In the class you and your classmates will learn about some of Hoi An's and Vietnam's well-known dishes such as Rice Paper Rolls of Shrimp, Crispy Pancakes with Shrimp, Seafood Salad, Vietnamese Eggplant in Clay Pot. The cookery lesson runs for about 2 hours - the Red Bridge chefs first demonstrate each dish before you prepare the same yourself. Included in the class is a brief introduction to the art of food carving or plate decoration and afterwards, sit down and eat what you have cooked! You will be returned to your hotel at around 2pm.
